Garlic-Crusted Salmon with Fresh Tomato-Cilantro Relish

Recipe:

  • 4 skinless salmon fillets
  • 2 garlic cloves, minced
  • ½ tsp sea salt
  • ½ tsp cracked white pepper
  • ½ tsp paprika
  • 1 tsp lemon juice
  • 1 tbsp olive oil

Direction:

  1. Preheat oven to 400 degrees. Line a baking sheet with parchment paper or foil.Whisk garlic, salt, pepper, paprika, lemon juice and olive oil together in a small bowl.
  2. Place the salmon fillets on lined baking sheet and rub evenly with the garlic oil mixture. Let marinate for 35 minutes.
  3. Broil 8-9 minutes until a golden-brown crust forms, but fillet is still moist and flaky inside.

Tomato-Cilantro Relish:

  1. ½ cup diced fresh tomatoes
  2. 2 garlic cloves, minced
  3. 1.5 tsp lemon zest
  4. 2 tsp lemon juice
  5. ¼ tsp sea salt
  6. Pinch fresh pepper
  7. ¼ cup fresh cilantro, chopped
  8. 1 tsp olive oil

Mix all ingredients, cover and refrigerate until ready to serve with the salmon
